Mead Braised Grass Fed Lamb Shanks with Raw Honey 

   For those of us who didn't grow up eating lamb, cooking shanks is a little daunting but this recipe was so delicious and so multi dimensional in flavour, it will become a go to recipe. Serve with your favourite side dish, potatoes, rice - the thick sauce makes an excellent gravy! 

Serves 4

Ingredients and Costing

4 Mabel May Farms Grass Fed Lamb Shanks - $24

375 mL Beehaven Session Mead - $4

250 g Keepin It Real Raw Honey - $5

8 Tbsp Apple Cider Vinegar -$0.25 

4 Tsp Raw Honey - $0.25

1 cup Whole Wheat Flour - $0.75

0.5 cup olive oil - $0.50 

6 Weathered Rock Farms Garlic Cloves - $1.00

1 Onion - $0.25

1 Carrot - $0.20

1 Celery Stalk - $0.20

500 mL Chicken Stock - $2.00 

1 Sprig of Thyme - $0.25

2 Sprigs of Fresh Rosemary (chopped)- $0.75

2 Bay Leaves - $0.25

Mead Braised Grass Fed Lamb Shanks with Raw Honey 

 Raw Ingredients for Recipe



  • Chop Carrot, Onion, Celery and Peel Garlic Cloves - Set Aside 
  • Mix 8 tbsp apple cider vinegar and 4 tsp raw honey (this gives a flavour similar to balsamic, while using local ingredients)- Set Aside 
  • Remove Stem from Rosemary - Set Aside 
  • Dust lamb shanks in flour - Set Aside additional flour
  • Heat oil on stove in heavy bottom oven safe pot 
  • Seal lamb shanks by turning in oil - Set Aside 
  • Add chopped vegetables into pot and saute 
  • Add bay leaves, thyme and remaining flour to pan and stir to coat vegetables 
  • Try really hard to not drink the mead intended for the recipe. We always have an extra bottle on hand for these situations! 
  • Add honey, apple cider vinegar/ honey mix, mead and chicken stock, stir.
  • Bring to a simmer and stir until flour is incorporated in liquid.
  • Heat oven to 300 degrees Fahrenheit
  • Cover pot and place in oven for 2.5 hours, depending on your oven you can cook to 3 hours, the lamb will fall off the bone, and be super tender. 
  • Remove meal from oven and stir in rosemary, let sit for 5 minutes to let rosemary infuse. 
  • Serve with local vegetables, mashed potatoes.
  • Enjoy!
