One Dish Roasted Half Chicken with Local Vegetables 

Serves: 4 adults 

   Eating whole foods doesn't have to be difficult.  The Half Chicken from Mabel May Farms is the perfect weeknight meal for a family - economical and easy on time and labour.  Put it all together in the oven, come back an hour and a half later and voila!  This meal pairs beautifully with Manor House Farm fresh White Bread! Stretch the meal further by taking the chicken bones, adding 2 L of water and simmering for a chicken broth! 

Ingredients and Costing 


1 Mabel May Farms Half Chicken (Approx 2.5 lbs) 

2 cloves of Garlic (when in season - we recommend Weathered Rock Farm's garlic) 

1 Onion, 4 carrots and 10 small or 3 large potatoes (All found in our Staples Boxes) 

1 Loaf of Manor House Farm White Bread 

Total Cost: $22.75 or $5.69 per person

  • Place Chicken in a Casserole Dish, make sure to choose a dish that leaves lots of room for veggies around the chicken. 
  • Cut Bread and set aside 
  • Chop carrots and onions into chunks 
  • Quarter Small potatoes, or chop large potatoes into chunks 
  • Peel Garlic 
  • Lay vegetables around the chicken 
  • Sprinkle with oil and add 3 tbsp of water to the dish 
  • Cover and cook on 350 degrees for 1 hour and 15 minutes 
  • Uncover and check - ensure the chicken is 165 degrees F or above 
  • Cook for 15 minutes letting everything crisp  
  • Remove from Oven, carve chicken and serve with fresh bread
