g These meads are for explorers. At Backed By Bees we focus on raw and unfiltered as much as possible preferring living seasonal drinks made from the botanicals of Ontario. But inherently that means they need to be kept cold and enjoyed quick or need to be very dry so we don’t produce a lot.
These meads can cover the full range of meadmaking from melomels, metheglins, cyers, pyments, capsicumels and acerglyns from dry to sack strength, still or carbonated.
Acapulco Gold - 14% abv - A classic capsicumel made with roasted ancho, guaillo and morita peppers. Semi-dry with a heat that is sure to warm you up on cold fall nights. For a limited time bundle this mead with Tijuana Tom's Smokin' Fuego. This collab brings Tom's heat and our honey together in perfect harmony.
Blueberry & Sage - 11% abv - Our first foray into a table wine style mead, this bright medium bodied melomel has a rose hue with a fruit and sage aroma. A great pairing for any meal that calls for a fruity white wine.
