Commercial honey producers that place honey on grocery store shelves often heat their honey in the range of 160 F to break down the natural sugar seed crystals and force the honey through micro filters to remove pollen grains. Breaking down the crystals helps keep honey from crystallizing for a longer period of time at store temperatures. However, heating above 115 F destroys the beneficial enzymes, antioxidants, vitamins, and aroma and filtering takes out the pollen grains.
Our Liquid Golden honey is our raw honey that has solidified. We heat it to 104 F, just enough to get it into our jars preserving as much of the beneficial stuff as we can.
