Beyond Boiled: Yellow Beans Get Their Glow-Up
This week’s Vegetable Recipe blog feature highlights one of the most underrated stars of summer — yellow beans. These cheerful golden pods in your veggie box are tender, sweet, and full of snap — ready to step out of the background and into your kitchen spotlight.
Whether you’re tossing them on the grill, adding crunch to salads, or turning them into a side dish that steals the show, yellow beans deserve a glow-up. Before we start cooking, here are a few fun facts:
Yellow Bean Fun Facts
- They’re just green beans in disguise! Also called wax beans, they’re the same species as green beans — the difference is their sunny color from a lack of chlorophyll.
- Best picked young. At their sweetest and snappiest when tender — letting them grow too long makes them stringy.
- Full of nutrients. Rich in vitamin C, fiber, and antioxidants for immune and gut health.
- They love bold flavors. Pair beautifully with garlic, lemon, chili, miso, butter, parmesan, or soy sauce.
- They’re a snap to cook. Fresh yellow beans break cleanly with a crisp snap — nature’s “ready to eat” sign.
