  • They’re just green beans in disguise! Also called wax beans, they’re the same species as green beans — the difference is their sunny color from a lack of chlorophyll.
  • Best picked young. At their sweetest and snappiest when tender — letting them grow too long makes them stringy.
  • Full of nutrients. Rich in vitamin C, fiber, and antioxidants for immune and gut health.
  • They love bold flavors. Pair beautifully with garlic, lemon, chili, miso, butter, parmesan, or soy sauce.
  • They’re a snap to cook. Fresh yellow beans break cleanly with a crisp snap — nature’s “ready to eat” sign.

Yellow Beans with Garlic, Dill & Parsley

A hearty, healthy, and flavorful weeknight side dish that’s easy to make and sure to please.

Ingredients

  • 1 lb yellow beans*
  • 4 garlic cloves*
  • 2 tbsp sunflower oil
  • Salt and pepper, to taste
  • Chopped parsley and dill (optional)

Instructions

  1. Roughly chop beans.
  2. Smash garlic cloves.
  3. Heat oil, add half the garlic, and sauté briefly.
  4. Add beans and sauté 2–3 minutes.
  5. Add 1 cup water and cook 20 minutes.
  6. Before removing from heat, add remaining garlic.
  7. Stir in dill and parsley, if using.

Honey Glazed Wax Beans with Almonds

Sweet honey glaze and crunchy almonds turn wax beans into an elegant side.

Ingredients

  • 1 lb yellow beans, trimmed*
  • 2 tbsp honey*
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup sliced almonds
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss beans with olive oil, salt, and pepper; spread on baking sheet.
  3. Roast 15–20 minutes until tender.
  4. In saucepan, combine honey and 1 tbsp water; simmer 2–3 minutes.
  5. Toss roasted beans with honey glaze.
  6. Top with toasted almonds and parsley.

Bacon-Wrapped Wax Bean Bundles

Ingredients

  • 1 lb yellow beans, trimmed*
  • 6 slices thick-cut bacon*

Instructions
