Celebrate the Kings in Your Family with a Fresh Twist

This week’s Vegetable Recipe blog feature: Father’s Day is this Sunday, and what better way to show Dad, Grandpa, Uncles, Brothers, or Friends some love than with a home-cooked meal made from the freshest local ingredients?

This week’s veggie box is packed with seasonal goodness, including one standout you might not be familiar with: kohlrabi.

Never heard of it? You’re not alone! Sometimes called “German turnip,” kohlrabi is a quirky-looking member of the brassica family (think cabbage, broccoli, and Brussels sprouts). But don’t let its odd shape fool you—kohlrabi is crisp, slightly sweet, and incredibly versatile. You can eat it raw like an apple, grate it into slaws, roast it with spices, mash it like potatoes, or even spiralize it for a low-carb noodle alternative.

This week I’m sharing some easy, flavorful recipes featuring kohlrabi that the whole family—especially the special men—will love. Whether he’s a meat-and-potatoes kind of guy or always up for something new, these dishes bring a seasonal and delicious twist to the Father’s Day table.

Recipe 1: Spicy Kohlrabi Fries

Move over potatoes—this spicy twist is the perfect appetizer or BBQ side dish!

Ingredients:

  • 2 kohlrabi bulbs, stems removed*
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp chili powder (optional, but delicious)

Instructions:

  1. Preheat oven to 400°F.
  2. Cut off all kohlrabi leaves, slice off top and root ends, then peel off outer skin.
  3. Slice into ½- to ¾-inch sections, then cut into fry shapes.
  4. Toss with olive oil, salt, pepper, paprika, and chili powder (if using).
  5. Spread on a greased baking sheet and bake for 40 minutes, until golden brown and tender.

Recipe 2: Kohlrabi Apple Slaw with Mustard Dressing

A crisp, tangy side—great with grilled meats or as a pulled pork sandwich topping. Leftovers keep well for weekday lunches!

Ingredients:

  • 2 kohlrabi bulbs, peeled and julienned*
  • 1 crisp apple, julienned*
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp BBB honey*
  • Salt & pepper to taste
  • Chopped parsley or dill (optional)

Instructions:

  1. Whisk dressing ingredients in a bowl or jar.
  2. Toss with kohlrabi and apple.
  3. Chill for 30 minutes before serving.

Recipe 3: Kohlrabi Curry

A hearty vegetarian dish for curry lovers.

Ingredients:

  • 1 whole kohlrabi, diced*
  • 2 tsp olive oil, divided
  • 2 tbsp minced garlic, divided
  • 1 cup basmati rice
  • ½ onion
  • 1 tomato
  • ½ cup water, divided
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tbsp lemon juice
  • 1 tsp curry powder
  • 1 tsp chili powder
  • ½ tsp kosher salt

Instructions:

  1. Preheat oven to 450°F.
  2. Toss diced kohlrabi with 1 tsp olive oil and 1 tbsp garlic. Roast for 20 minutes.
  3. Cook basmati rice as directed.
  4. Dice onion and tomato. In a saucepan, heat 1 tsp olive oil and ¼ cup water.
  5. Add mustard and cumin seeds. When they sputter, add onion; cook until tender.
  6. Add tomato; cook until soft.
  7. Add roasted kohlrabi, lemon juice, curry powder, chili powder, remaining garlic and water.
  8. Simmer for 8–10 minutes until water cooks down.
  9. Serve over rice.
